Mungbean

Mung beans (Vigna radiata), also known as green gram, maash or moong  (from Sanskrit:  romanized: mudga), are a plant species in the legume family.  Green beans are mainly cultivated in East Asia, Southeast Asia and the Indian subcontinent.  This is used as an ingredient in savory and sweet dishes. Mung bean seeds are grown for fresh or canned use to be sent to restaurants. Sprouts are high in protein (21% -28%), calcium, phosphorus and certain vitamins. Because they are easily digested, they replace the rare animal protein in human food in the tropical regions of the world. Because of its main use as a sprout, high quality seeds are needed with excellent sprouts. The food industry likes to get about 9 or 10 grams of fresh sprouts for every gram of seed. Larger seeds with a green color like glass appear to be preferred. If the seeds of green beans do not meet the sprout standard, it can be used as animal feed with about 1.5 tons of green beans equivalent to 1.0 tons of soy flour for protein content. Food trials have been conducted at Oklahoma State University for piglets and young with good results.
