            Carbohydrates are sugars, starches and fibers found in fruits, seeds, vegetables and dairy products. Carbohydrates are one of the main food groups that are important for a healthy diet. Carbohydrates provide fuel for the central nervous system and energy for working muscles. They also prevent the use of protein as an energy source and allow fat metabolism. Carbohydrates play a major role in living organisms. Polysaccharides are used to store energy (eg starch and glycogen) and as structural components (eg cellulose in plants and chitin in arthropods). 5-carbon ribose monosaccharides are important components of coenzymes (eg ATP, FAD and NAD) and are the basis of genetic molecules known as RNA. Bound deoxyribose is a component of DNA. Saccharides and their derivatives include many other important biomolecules that play a key role in the immune system, fertilization, prevention of pathogenesis, blood clotting and development. Carbohydrates are polyhydroxy aldehydes, ketones, alcohols, acids, simple derivatives and polymers that have an acetal type bond. They can be classified according to their degree of polymerization and the first can be divided into three main groups, namely sugars, oligosaccharides and polysaccharides.
