Food Additives

Food additives are substances added to food in order to preserve flavor or improve its taste , appearance or other qualities. With the advent of processed foods in the second half of the twentieth century, many more additives, both of natural and artificial origin, were introduced. Food additives may include substances that may be incorporated into food indirectly during processing , packaging, or storage or transportation. To regulate these additives and inform consumers, a unique number is assigned to each additive, called the "E number," which is used for all approved additives in Europe. The Codex Alimentarius Commission has now adopted and extended this numbering scheme to identify all the additives internationally, regardless of whether they are approved for use. Many additives have been used for decades, such as food preservation by pickling (with vinegar), salting, as with bacon, preserving sweets, or using sulfur dioxide as with wines.
